Happy to found a way to use my levain starter instead of throwing it away every morning.
Basically mix 255g mature 100% sourdough tarter, 1T maple syrup, 1t vegetable oil, 1 egg yolk, 1/4 t salt, 1/4 t baking soda, 1/2 t baking powder.
Beat egg white until soft peaks then fold into mixture.
Heat up pan with a little butter and use 1 ladle at a time to make pancakes.
This made 4 big ones keeping 2 people very happy indeed.
Very good American style pancakes, had them with some caramelized figs, lemon juice and maple syrup.
